I would like to detect a certain byte pattern in an incoming byte stream at the UART. I am using Arduino. Currently, the code detects a single \r character. On this character is detected, the byte stream before this character gets stored into a buffer. This is easy. This is my code;

The base of the problem: I have an Arduino Due and a MPU6050 accelerometer and an 23lcv512. MPU gives me 16bit signed integer. I would like to save the datas to the SRAM and after the measurement read them back and via Serial send it to PC. Sending to PC is not a problem. The problem is that this SRAM has 128k pcs 8bit address. My numbers are 16 bit. I can't write them directly. Here is my code. I tested the RAM with this code:

I added the 23LC library. If it's run reads back the numbers from the RAM but after 255 it starts to read 0 again. I know why does it happen. But I don't know howto solve the problem.
I tried to use the writeBlock command but it only works for me with char variables. Char variable requires more space than integers. I have not too much.

I am relatively new to arduino and its programming though I have been plodding along and getting results. I have added a shortened version of my sketch which connects to my webserver and obtains the current temp for a particular city. I will then use that temp to set my heater also controlled by my arduino. The problem I am facing is I cant get my head around how to return to the main loop after I've read the data on webserver from the connectandread function. The sketch stops/halts after receiving the data(temp). Eventually I will be calling the function every 2 hours. So all in all I need to call the function then after it runs return to the main loop. Well, at least the version of the sketch you have posted have an infinite loop in it... (while(true)).
Try un-commenting the line with return inString;.
Also unrelated, since you read data from external source, you need to stop reading after you have received 31 characters even if you have not received an ">". Otherwise, a bug or malicious code on the server can corrupt your memory.

So, basically a message is considered completed only if it is between the special characters ><, like this: >message<. Then you can do the same on reading.
It does not have to be too complicated. If you look carefully at your last whlie-loop you can see that the software does not get a chance to read more than one character each time it passes through the loop. So that is what you get: one character at a time.
In your first while-loop you did better: you collected all the incoming letters until nothing was available and then sent them all at once. So if you make your last loop look more like the first one, you'll get a better result.
As mentioned a protocol to frame messages is needed between devices. A quick way to do this is to use Bill Porter's EasyTransfer library which does exactly what you are trying to do, over either UART or I2C. It has several examples.
Serial.read() reads only one byte every time you use it. A simple solution would be to store each byte on a char array while Serial.available>0 and then print the String with the whole message that was sent.

I communicate with Arduino via Serial using a program that sends a series of bytes.
In order for the Arduino to realize it is receiving a message rather than junk, I have tagged the start of my byte array with the chars 'S' 'T' 'A' 'R' 'T'. After this will eventually follow a series of bytes that will be assigned to internal variables (not yet implemented).
The Arduino must read each byte sequentially and compare it to the byte array and if all are present in the correct order it will continue with the next part of the program, otherwise it will should discard current byte and wait for more bytes to arrive.
I am trying to implement it in the most efficient and readable way rather than using a series of nested if statements.

You could try to calculate your message. CRC is old and good solution. I use it and it works perfect for me. I am not sure what kind of device are you communicating with.

I'm using two Arduinos to sent plain text strings to each other using NewSoftSerial and an RF transceiver.
Each string is perhaps 20-30 characters in length. How do I convert Serial.read() into a string so I can do if x == "testing statements", etc.?

I've built a small library a while back that handles message reception, but never had time to opensource it.
This library receives \n terminated lines that represent a command and arbitrary payload, space-separated.

Here is a more robust implementation that handles abnormal input and race conditions.
It detects unusually long input values and safely discards them. For example, if the source had an error and generated input without the expected terminator; or was malicious.
It ensures the string value is always null terminated (even when buffer size is completely filled).
It waits until the complete value is captured. For example, transmission delays could cause Serial.available() to return zero before the rest of the value finishes arriving.
Does not skip values when multiple values arrive quicker than they can be processed (subject to the limitations of the serial input buffer).
Can handle values that are a prefix of another value (e.g. "abc" and "abcd" can both be read in).
It deliberately uses character arrays instead of the String type, to be more efficient and to avoid memory problems. It also avoids using the readStringUntil() function, to not timeout before the input arrives.
The original question did not say how the variable length strings are defined, but I'll assume they are terminated by a single newline character - which turns this into a line reading problem.
